“Chipp” is the local name in Hokkaido for Himemasu, a landlocked form of sockeye salmon that spends its entire life in freshwater lakes. While commonly known as “Himemasu” throughout Japan, in Hokkaido it is affectionately called “Chipp”—a name inspired by the Ainu word chep, meaning “fish.”

Lake Shikotsu is one of the most well-known habitats for Chipp. To prevent overfishing, the fishing season is strictly limited to just three months—from June to August—making this a rare and truly seasonal delicacy.
